What makes the recipe different from the Rhodope patatnik are the additions of cheese and sausage, with the help of which the patatnik is extremely popular among men.
Peel the potatoes and prepare all the ingredients.
Grate the potatoes on a coarse grater, add salt and leave for 10 minutes. Then squeeze them well with your hands from the water they let out.
Add the 2 eggs, finely chopped onion and spices along with the chopped sausage.
Stir and heat the pan with 25 grams of butter or olive oil.
When the sides of the patatnik are browned, flip over, remembering to put the other half of the butter or olive oil in the pan before you return it to cook the other side.
In order not to screw everything up when flipping you need to put a plate on the pan. We put the plate on the patatnik, and flip. Melt the other half of the butter or olive oil and slip the patatnik into the pan to brown the other side.
Immediately after turning you can add the grated cheese, which will melt on the patatnik.
It is best served with garlic sauce or yoghurt. Bon appetit!
