The colours of Bulgaria in one bowl
The fresh history of Bulgaria in one plate
Chopped salad is one of the most recognizable dishes of Bulgarian cuisine and undoubtedly the most famous Bulgarian salad outside the country. Created from a few simple but highly characteristic products, it has become the culinary symbol of Bulgaria, alongside the pie and yoghurt.
Fresh, colourful and balanced, the Shopska salad is an essential part of the Bulgarian table - from the summer dinner at home to every tavern that respects the tradition.

Historical origin
Not so ancient, but eternal
Unlike many other traditional dishes, Chopped salad has relatively modern history. It became established in the 1950s, when it began to be purposefully promoted as a national dish. Thanks to its simplicity and memorable taste, the salad quickly found a place in both home cooking and tourist restaurants.
Its name comes from Shoplifter - an ethnographic region in western Bulgaria, known for its traditions, agriculture and characteristic folklore. Although its ingredients are spread all over the country, the name emphasises the link with the Bulgarian land and rural way of life.
The colours of the Bulgarian flag
It is often noted that the Shopska salad brings the colours of the Bulgarian flag:
- red - from tomatoes
- green - from cucumbers and peppers
- white - from the grated cheese
This is not just a visual effect, but another reason the salad is seen as a symbol of the country - simple, clear and highly recognisable.
Bulgarian white cheese
the key to authentic taste
No Bulgarian white salted cheese the Shopska salad would not be what it is. It doesn't just complement the vegetables, it creates contrast and completeness.
Facts about Bulgarian white cheese:
- made from cow's, sheep's, goat's or mixed milk
- ripens in brine, which gives it a characteristic saltiness
- has a crumbly but juicy texture
- has a rich milky taste
Cheese has been a traditional Bulgarian product for centuries and is present in almost every emblematic dish - banitsa, shopa salad, roasted peppers with cheese, tutmanik. It is coarsely grated and added just before serving to preserve its texture.

The classic ingredients
nothing superfluous
The real Shopska salad relies on quality, not quantity:
- well ripened tomatoes
- fresh cucumbers
- green pepper (often roasted)
- onion (optional)
- parsley
- oil or olive oil
- a little vinegar
- grated Bulgarian white cheese
Any attempt to „improve“ it with olives, corn or other additives already takes it away from the classics.
How and when to serve
and why it is eternal
Chopped salad is traditionally served:
- as an appetizer
- well chilled
- with freshly baked bread
- and often in the company of brandy
It prepares the taste for the main dish and is a natural start to any Bulgarian meal.
Stuffed peppers with egg, cheese and tomato
Perfect for the summer heat, easy stuffed peppers in the oven.
Small but important
- Seasonal tomatoes make the salad many times tastier.
- The cheese is grated, not cut.
- The vinegar is just an accent, not the leading flavor.
Salad,
which tells a story
The Chopska salad is proof that Bulgarian cuisine can be strong and memorable without complexity. It combines the land, the climate and our products in a dish that speaks of Bulgaria without words.
With every bite - freshness from the vegetables and salty character from the cheese - it continues to be one of the purest and most recognizable symbols of the Bulgarian table.
