Chopped salad is one of the most recognizable dishes of Bulgarian cuisine and undoubtedly the most famous Bulgarian salad outside the country. Created from a few simple but highly characteristic products, it has become the culinary symbol of Bulgaria, alongside the pie and yoghurt.

Fresh, colourful and balanced, the Shopska salad is an essential part of the Bulgarian table - from the summer dinner at home to every tavern that respects the tradition.

Historical origin

Not so ancient, but eternal

Unlike many other traditional dishes, Chopped salad has relatively modern history. It became established in the 1950s, when it began to be purposefully promoted as a national dish. Thanks to its simplicity and memorable taste, the salad quickly found a place in both home cooking and tourist restaurants.

Its name comes from Shoplifter - an ethnographic region in western Bulgaria, known for its traditions, agriculture and characteristic folklore. Although its ingredients are spread all over the country, the name emphasises the link with the Bulgarian land and rural way of life.

It is often noted that the Shopska salad brings the colours of the Bulgarian flag:

  • red - from tomatoes
  • green - from cucumbers and peppers
  • white - from the grated cheese

Cheese has been a traditional Bulgarian product for centuries and is present in almost every emblematic dish - banitsa, shopa salad, roasted peppers with cheese, tutmanik. It is coarsely grated and added just before serving to preserve its texture.
